Air Fryer Rotisserie Turkey Tenderloins

Ingredients

  • 1 package (24 oz) Butterball All Natural* Rotisserie Turkey Breast Tenderloins
  • Cooking spray
  • 1 bag of your favorite kale salad kit with dressing
  • 1 apple, cored and diced
  • 1 red onion, thinly sliced 
  • 1/4 cup crumbled blue cheese

Directions

  1. Preparing the Turkey Tenderloins: Lightly spray the air fryer basket with cooking spray. Place the turkey tenderloins in the air fryer basket in a single layer. Set the air fryer to 400°F (200°C) and cook for 10 minutes. Flip the tenderloins and cook for another 15 minutes until the internal temperature reaches 165°F (74°C). Let the tenderloins rest for 5 minutes before cutting.
  2. Assembling the Harvest Chopped Salad: While the turkey is cooking, prepare the salad. In a large bowl, combine all the ingredients from the kale salad kit, along with the apple, onion, and blue cheese. Toss with the dressing. Slice or cube the turkey tenderloins. Divide the salad among plates and top each with the cut turkey.

TIPS & NOTES:

  • This salad is great for meal prep. If cooking for 1 or 2, cook and cut all the turkey, reserving for later.
  • Feel free to customize the salad with your favorite ingredients or add-ins, such as roasted sweet potatoes, pomegranate seeds, or crumbled feta instead of blue cheese.
