Ingredients

  • 1 package (8 ounces) Butterball® All Natural Breakfast Sausage Links
  • 2-4 slices Butterball® Original Turkey Bacon
  • ½ cup strawberries, sliced (Can sub with any preferable fruit)
  • ¼ cup blueberries (Can sub with any preferable fruit)
  • 1 cup all-purpose flour (spooned and leveled)
  • 1 teaspoon sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon coarse salt
  • 1 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • Maple syrup, on the side

Directions

  1. Prepare Bento Box ingredients 
  2. Place turkey bacon in single layer in unheated skillet. Heat 7 to 9 minutes over medium heat to desired crispness turning several times.
  3. Cook breakfast sausage links in a medium skillet over medium high heat. Heat thoroughly, 6 to 10 minutes, turning links halfway through heating. Remove sausage links; drain on paper towels and set aside.
  4. Wash and slice strawberries and blueberries.
  5. Make silver dollar pancakes: In a small bowl, whisk together dry ingredients: 1 cup all-purpose flour, 1 teaspoon sugar, 1 ½ teaspoon baking powder, and ¼ teaspoon salt. In a medium bowl, whisk together wet ingredients: 1 cup milk, 2 tablespoons melted butter, and 1 large egg. Combine dry and wet ingredients and mix until there are few lumps left. Heat skillet over medium heat and lightly grease the pan with butter. Working in batches of 3-4, drop batter by tablespoonfuls, and cook and flip until browned.
  6. Assemble the Bento Box: place breakfast sausage links, turkey bacon, silver dollar pancakes, prepared fruit, and a side of maple syrup on the side into the bento box.
