Harrison Wallace’s Smoked Gouda and Caramelized Onion Turkey Burger

Ingredients
1 lb Butterball ground turkey
1 cup shredded gouda cheese
4 Tbsp (1/2 stick) cold butter, grated
2 Tbsp chopped parsley
1 clove minced garlic
Salt and pepper to taste
1 tsp Onion powder
Pinch of cayenne
Burger toppings of your choice
For the Caramelized Onion Topping
2 Tbsp butter
2 cups sliced yellow onions
1 Tbsp Worcestershire sauce
4 Brioche buns
Directions
Melt 2 Tbsp butter for the caramelized onions in a skillet over medium low heat, and sauté the onions. Add the Worcestershire sauce, and stir. Turn the heat down to low, and let the onions brown and begin to caramelize, for about 20 minutes.
Meanwhile, preheat your grill, cast iron skillet or grill pan. In a large bowl, combine the Butterball ground turkey, shredded gouda cheese, grated butter, parsley, garlic, salt, pepper, onion powder and cayenne and mix together with clean hands. Be careful not to over mix the ground turkey, and mix just until all the ingredients are combined and evenly distributed. Split into 4 equal patties, and gently press into shape.
Cook the patties on one side for about 5-6 minutes, then flip and cook for another 3-4 minutes or until they reach an internal temperature of 165 degrees. Check on the onions, and add a splash of water if they look dry. Split and toast the brioche buns, either on the cool side of your grill, in the same skillet as the burgers, or in the oven. Divide the 4 patties between the bottom buns, top with the caramelized onions, and your favorite burger toppings.
