Turkey Bacon Cornbread

Ingredients

  • 4 cups yellow corn meal
  • 1 tablespoon baking powder
  • 1-1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground black pepper
  • 3-1/2 cups buttermilk
  • 1/2 cup sour cream
  • 4 large eggs
  • 7 tablespoons vegetable oil, divided
  • 12 slices Butterball Turkey Bacon, cooked, drained, diced
  • Whipped butter, optional
  • Honey, optional

Directions

  1. Preheat oven to 425°F. Place 10-inch diameter oven proof skillet in oven while oven is preheating.
  2. Meanwhile, combine dry ingredients in large mixing bowl. In a separate bowl, whisk buttermilk, sour cream, eggs and 4 tablespoons of the oil until blended. Stir liquid ingredients into dry ingredients, mixing just until all ingredients are moistened. Stir in cooked bacon.
  3. Carefully remove skillet from oven. Pour in remaining 3 tablespoon oil and swirl over bottom and sides of skillet. Pour corn meal mixture into hot skillet.
  4. Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean. Serve warm with whipped butter and honey, if desired.
