Ingredients
- 1⁄4 cup extra virgin olive oil, divided in half
- 1 package Butterball® Hardwood Smoked Dinner Sausage cut on the bias into 1 1⁄2 inch pieces
- 1 spanish/yellow onion, diced
- 1⁄2 cup flat leaf parsley, chopped - reserve 1 tbsp for garnish
- 3 large garlic cloves, minced
- 1 tsp Kosher salt
- 2 tsp fresh ground pepper
- 1 tbsp smoked paprika
- 2 tsp chopped oregano
- 1 can (14.5 oz) whole tomatoes, drained and crushed with the back of a spoon
- 3 cups paella rice (sometimes called Bomba rice. Short grain)
- 4 cups chicken broth
- A pinch of saffron threads (optional)
- 12 clams
- 12 jumbo shrimp
- 1⁄2 cup frozen peas
