Ingredients

  • 1⁄4 cup extra virgin olive oil, divided in half
  • 1 package Butterball® Hardwood Smoked Dinner Sausage cut on the bias into 1 1⁄2 inch pieces
  • 1 spanish/yellow onion, diced
  • 1⁄2 cup flat leaf parsley, chopped - reserve 1 tbsp for garnish
  • 3 large garlic cloves, minced
  • 1 tsp Kosher salt
  • 2 tsp fresh ground pepper
  • 1 tbsp smoked paprika
  • 2 tsp chopped oregano
  • 1 can (14.5 oz) whole tomatoes, drained and crushed with the back of a spoon
  • 3 cups paella rice (sometimes called Bomba rice. Short grain)
  • 4 cups chicken broth
  • A pinch of saffron threads (optional)
  • 12 clams
  • 12 jumbo shrimp
  • 1⁄2 cup frozen peas
  • Lemons for serving

Directions

  1. In a large Paella pan or wide shallow skillet add 2 tablespoons of the olive oil on medium-high heat and sauté the sausage until browned. When finished, remove from pan, cover and hold until later.
  2. Add the rest of the olive oil to pan used for sausage. Sauté onions, garlic and parsley for 2-3 minutes. Add salt, pepper, paprika and oregano. Sauté until combined. Add tomatoes and cook another 2 minutes.
  3. Fold in the rice and stir to coat the grains. Add the broth and saffron and simmer, covered, for 15 minutes. Add cooked clams, shrimp, and reserved sausage, nestling them into the rice. Let simmer until the rice is al dente. About 15 minutes. Garnish with sliced lemons and chopped parsley.
